Mexican Casserole

This is a combo of a couple recipes made into a casserole.

  • Meatless Taco Filling find recipe here.
  • can diced tomatoes, drained
  • 1 each red  green pepper, diced
  • 16oz frozen corn, thawed
  • 1c shredded cheese, I used Mexican but you can use whatever you like.

Layer the rice then I layered “meat” mixture, though thinking would work better being on top as last layer next time. Layer each remaining ingredient using cheese last. Bake in a 350 degree heated oven for about 30 minutes until cheese is melted. Add sour cream and pico de gallo if you wish and enjoy!IMG_0314signature
