A Family Affair

I enjoy feeding my family healthy and one of those things is  Brown Rice Wheat berry bake that I make and hope we have leftovers so I can use them in another recipe the following day. This rarely happens unless I make a second batch and keep it in the kitchen…where no one will get into it. It is really easy to make, just takes an hour to cook so I make it when I can.

Rice Wheat Berry Bake

  • 1c wheat berries
  • 2c brown long grain rice
  • 4c boiling water

Place the rice and wheat berries in a sprayed 9x13 pan and mix. Pour the boiling water over top and seal with 2 pieces of aluminum foil. Place in a  350 degree preheated oven and bake for 1 hour. Perfect every time!

So with the leftovers I made sure I had from the other night I made a Mexican casserole for dinner.

I made a meatless taco filling that I added over top of the Rice, then added a drained can of diced tomatoes, 16 oz bag of defrosted frozen corn and 1/2c of Mexican Cheese blend cheese.

It is baking in the oven right now and smells awesome!!

I know the kids will devour it so I will be sure to photograph it first so i can do a proper recipe down the road for it! :)

Do you buy wheat berry in bulk? I'm sort of embarrassed I don't know this :) This sounds great...especially the casserole idea, I'm totally going to use it! If you put a "proper recipe" down the road I'd love to share it for Wii Eat Healthy :)

Hey Jenn...thanks for popping in! I do buy my wheat berry in bulk at my local co-op. I do not think I have ever seen it at my grocer though would not be surprised to hear Trader Joes or Whole Foods have it already packaged.
